It’s more than a great cookie at a great price.  It’s a tasty journey.  “I have a passion for entrepreneurship and marketing,” said Colleen O’Malley.  It’s this very passion that led her to open Prior Lake’s first gourmet cookie franchise outlet, Eileen’s Colossal Cookies.  “My husband and I always wanted to have our own business and I’ve always loved baking so this combination was ideal circumstance.”

There’s a Nebraska connection to Eileen’s Colossal Cookies.  Eileen’s was founded in Hastings, NE over 30 years ago and have since opened stores in South Dakota, Kansas, Texas, Wyoming and Colorado but the newly opened Prior Lake store has the privilege of being Minnesota’s first outlet.  To help make the story come full circle, her husband, Sean, grew up in Nebraska.  The state’s small town values and insistence upon quality wasn’t lost on them.

“The more I learned about the company, the more I realized that Eileen’s values seemed a good match with mine,” she said.  “I knew they were about quality and I when I bake I always insist that it turn out delicious.”

The timing for an Eileen’s Colossal Cookies here in Prior Lake couldn’t be better.  According to data from Southern Loving Cooking School, 70% of Americans consider themselves cookie lovers and virtually all Americans eat cookies at least once a month.  Prior Lake cookie data wasn’t immediately available but we suspect the numbers for here are even higher.  The cookie is, it seems, more American than apple pie.

Given this strong trend, Colleen has some cookie cutter innovation lined up for her customers.  Her cookies can be custom baked and yes they can be colossal.  In other words, if your child is having a birthday party and you’re looking to replace the traditional cake offering, here comes the colossal, gourmet cookies.  Ordering to size, occasion and taste is what she wants it to be about. 

We learned that Seinfeld is her favorite television show.  The first thought that came to us is the episode where Jerry and Elaine are talking in a bakery and Jerry, while munching on a cookie, dispenses worldly advice about racial harmony to Elaine saying simply that we need only to “Look to the cookie, Elaine.  Look to the cookie.”  It seems a safe bet that if Seinfeld is her favorite show, cookies may very well be her favorite food.
